Method
- Preheat your oven to 375 degrees Fahrenheit. Grease a 9x13 inch baking pan or line it with parchment paper.
- In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt. Blend in the cold, cubed butter until the mixture resembles coarse crumbs.
- Add the egg and mix until the dough starts to come together. Press half of the dough into the bottom of the prepared pan.
- In another bowl, combine the blueberries, remaining 1/2 cup of sugar, cornstarch, lemon juice, and lemon zest. Stir gently to avoid crushing the fruit.
- Pour the blueberry mixture over the bottom crust and spread it evenly. Crumble the remaining dough over the top of the berries.
- Bake for 45 to 50 minutes until the top is light brown and the filling is bubbling. Let cool completely in the pan before cutting.
Notes
Ensure to use cold butter for a flaky crust. Let the bars cool completely for clean cuts.
