Ingredients

  • 8 slices thick-sliced bread (challah or brioche)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 2 tsp vanilla extract, divided
  • 4 large eggs
  • 1/2 cup whole milk
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon (optional)
  • 2 cups fresh blueberries
  • 1/4 cup maple syrup
  • 1 tbsp lemon juice
  • 3 tbsp butter

Method

  1. Step 1: Beat the softened cream cheese with powdered sugar and 1 teaspoon vanilla extract until smooth and fluffy.
  2. Step 2: Spread approximately 2 tablespoons of the cream cheese mixture onto four slices of bread and top each with another slice to create a sandwich.
  3. Step 3: In a shallow bowl, whisk together eggs, milk, granulated sugar, remaining vanilla extract, and cinnamon.
  4. Step 4: Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter.
  5. Step 5: Dip each stuffed sandwich into the egg mixture, coating both sides thoroughly.
  6. Step 6: Cook the blueberry cheesecake french toast for 3-4 minutes per side until golden brown.
  7. Step 7: Prepare the blueberry topping by combining blueberries, maple syrup, and lemon juice in a small saucepan and cooking over medium heat for 5-7 minutes.
  8. Step 8: Serve the blueberry cheesecake french toast immediately, topped with the warm blueberry sauce.

Notes

Use day-old bread for best results. Ensure cream cheese is at room temperature before mixing. Don't oversaturate the bread in the egg mixture. Maintain medium heat while cooking.
