- Preheat your oven to 375°F. Butter a 9x9-inch baking dish or a 2-quart baking dish generously.
- Combine blackberries, 3/4 cup sugar, lemon juice, and cornstarch in a large bowl. Toss gently until berries are evenly coated.
- Whisk together flour, 1/2 cup sugar, baking powder, and salt in a medium bowl.
- Add cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Mix milk and vanilla extract in a small bowl. Pour this into the flour-butter mixture. Stir gently until just combined.
- Pour the blackberry mixture into your prepared baking dish. Spread it evenly across the bottom.
- Drop spoonfuls of topping over the blackberries. Sprinkle coarse sugar over the top if desired.
- Bake for 40-45 minutes until the topping is golden brown and the filling bubbles around the edges.
- Remove from the oven and let cool for 15 minutes before serving.
Notes
Use cold butter for a flaky texture. Don't skip the lemon juice as it enhances the flavor. Let the cobbler rest before serving for better texture.
