Ingredients

  • 4 cups fresh or frozen blackberries
  • 3/4 cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar (for topping)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, cubed
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons coarse sugar (optional)

Method

  1. Preheat your oven to 375°F. Butter a 9x9-inch baking dish or a 2-quart baking dish generously.
  2. Combine blackberries, 3/4 cup sugar, lemon juice, and cornstarch in a large bowl. Toss gently until berries are evenly coated.
  3. Whisk together flour, 1/2 cup sugar, baking powder, and salt in a medium bowl.
  4. Add cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  5. Mix milk and vanilla extract in a small bowl. Pour this into the flour-butter mixture. Stir gently until just combined.
  6. Pour the blackberry mixture into your prepared baking dish. Spread it evenly across the bottom.
  7. Drop spoonfuls of topping over the blackberries. Sprinkle coarse sugar over the top if desired.
  8. Bake for 40-45 minutes until the topping is golden brown and the filling bubbles around the edges.
  9. Remove from the oven and let cool for 15 minutes before serving.

Notes

Use cold butter for a flaky texture. Don't skip the lemon juice as it enhances the flavor. Let the cobbler rest before serving for better texture.
