  • 1 large head fresh cauliflower
  • 1 cup all-purpose flour
  • 1 cup milk (dairy or plant-based)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup BBQ sauce
  • 1 tablespoon melted butter or oil

Method

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Wash and dry the cauliflower, then cut it into bite-sized florets.
  3. In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Slowly pour in the milk while whisking to achieve a smooth batter.
  5. Coat the cauliflower florets in the batter and arrange them on the baking sheet without crowding.
  6. Bake for 20 to 25 minutes, flipping halfway through for even browning.
  7. Prepare the glaze by mixing BBQ sauce with melted butter or oil.
  8. Toss the roasted cauliflower in the BBQ glaze and return to the oven for an additional 8 to 10 minutes.

Notes

Ensure the cauliflower is dry before coating to achieve maximum crispiness. Serve immediately for the best texture.
