Method
- Preheat oven to 400°F (200°C). Scrub potatoes, then pat completely dry. Prick each potato several times with a fork.
- Drizzle potatoes with olive oil, rubbing evenly. Generously sprinkle kosher salt and black pepper.
- Place seasoned potatoes directly on the oven rack. Bake for 60-90 minutes, until tender and easily pierced. Rotate halfway for even cooking.
- While potatoes bake, prepare toppings: shred cheese, cook meats, chop veggies, warm sauces, and arrange condiments.
- Remove hot potatoes from oven. Carefully slice each lengthwise, fluff the inside, and arrange on a platter. Set out all prepared toppings in separate bowls.
