Ingredients
  

  • 4-6 large russet potatoes
  • 1-2 tablespoons olive oil
  • Kosher salt to taste
  • Black pepper to taste
  • Sliced cheeses (shredded cheddar, Monterey Jack, blue cheese)
  • Savory meats (crumbled bacon, diced ham, cooked chicken, chili)
  • Fresh veggies (diced tomatoes, sliced green onions, corn, jalapeños, broccoli)
  • Sauces & condiments (sour cream, ranch, BBQ sauce, hot sauce, salsa, guacamole)

Method
 

  1. Preheat oven to 400°F (200°C). Scrub potatoes, then pat completely dry. Prick each potato several times with a fork.
  2. Drizzle potatoes with olive oil, rubbing evenly. Generously sprinkle kosher salt and black pepper.
  3. Place seasoned potatoes directly on the oven rack. Bake for 60-90 minutes, until tender and easily pierced. Rotate halfway for even cooking.
  4. While potatoes bake, prepare toppings: shred cheese, cook meats, chop veggies, warm sauces, and arrange condiments.
  5. Remove hot potatoes from oven. Carefully slice each lengthwise, fluff the inside, and arrange on a platter. Set out all prepared toppings in separate bowls.
