Method
- Toast the sourdough bread until golden brown.
- While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and pepper, then mash to your desired consistency.
- Heat olive oil in a non-stick skillet over medium heat. Crack the eggs into the pan and cook until the whites are set and the yolks are runny, about 3-4 minutes.
- Spread the mashed avocado generously on each slice of toasted bread. Top each slice with a fried egg.
- Sprinkle with red pepper flakes, cilantro or parsley, and serve immediately.
Notes
Use fresh, ripe avocados for the best flavor. Adjust toppings and seasonings to your preference.
