  • 2 thick slices of sourdough bread
  • 1 large ripe avocado
  • 2 large eggs
  • 1 teaspoon lemon or lime juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Sea salt and black pepper to taste
  • 1 tablespoon fresh cilantro or parsley (for garnish)

Method
 

  1. Toast the sourdough bread until golden brown.
  2. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and pepper, then mash to your desired consistency.
  3. Heat olive oil in a non-stick skillet over medium heat. Crack the eggs into the pan and cook until the whites are set and the yolks are runny, about 3-4 minutes.
  4. Spread the mashed avocado generously on each slice of toasted bread. Top each slice with a fried egg.
  5. Sprinkle with red pepper flakes, cilantro or parsley, and serve immediately.
