Ingredients
  

  • 3 large ripe avocados
  • 2 cups fresh or frozen cor
  • 1/2 cup red onion, finely diced
  • 2 medium Roma tomatoes, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 small jalapeño, minced
  • 3 tablespoons lime juice, freshly squeezed
  • 1 tablespoon olive oil, extra virgi
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Dice the ripe avocados into small, bite-sized pieces.
  2. Finely dice the red onion and Roma tomatoes.
  3. If using fresh corn, cut the kernels from the cobs. If using frozen corn, ensure it is fully thawed.
  4. Mince the jalapeño, removing seeds for less heat.
  5. Finely chop the fresh cilantro.
  6. In a large mixing bowl, gently combine the diced avocado, corn, red onion, tomatoes, jalapeño, and cilantro.
  7. Pour lime juice and olive oil over the mixture, then sprinkle with salt and black pepper.
  8. Gently toss all ingredients together until well combined.
  9. Serve immediately or chill for 15-20 minutes to meld flavors.

Notes

Choose ripe avocados that yield slightly to pressure. Dice avocados last to prevent browning. Fresh lime juice is key for flavor.
