  • 4 medium crisp apples (Granny Smith or Honeycrisp)
  • 1 cup dried cranberries (unsweetened or lightly sweetened)
  • 3/4 cup chopped walnuts or pecans (toasted)
  • 2 medium celery stalks (finely chopped)
  • 1/2 cup Greek yogurt or mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt

Method
 

  1. Wash and core the apples, chop them into bite-sized chunks, and drizzle with lemon juice.
  2. In a large mixing bowl, combine the chopped apples, dried cranberries, chopped nuts, and diced celery.
  3. In a separate bowl, whisk together the Greek yogurt, honey, and salt, then pour over the apple mixture and fold gently.
  4. Cover and refrigerate for at least 30 minutes before serving.

Notes

Use a mix of sweet and tart apples for depth of flavor. Toast nuts for enhanced taste. The salad tastes better after sitting for 30 minutes.
