Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 2 medium diced apples (Honeycrisp or Granny Smith)
  • 2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 2 teaspoons ground cinnamo
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish.
  2. In a large mixing bowl, combine the rolled oats, cinnamon, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, milk, maple syrup, and vanilla extract.
  4. Fold the diced apples into the dry oat mixture.
  5. Pour the wet ingredients over the oat and apple mixture and stir gently.
  6. Transfer the mixture to your prepared baking dish and spread it evenly.
  7. Bake for 35-40 minutes until the top is golden brown and the center is set.
  8. Remove from the oven and let it cool for about 5 minutes before serving.

Notes

You can prepare this dish the night before and bake it fresh in the morning. For a vegan version, replace the eggs with flax eggs. This recipe can be easily doubled for larger gatherings.
