- Slice the smoked sausage into 1-inch thick rounds and place them in the crockpot.
- Core and slice the apples into wedges and add them to the crockpot along with the sliced onion.
- In a medium bowl, whisk together the apple cider, brown sugar, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
- Pour the apple cider mixture over the sausage, apples, and onions, and gently stir to coat.
- Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, check the consistency and add cornstarch mixed with cold water if a thicker sauce is desired.
- Taste and adjust seasonings before serving hot.
